Do you love nachos? I do, too! However, it’s not the best choice when trying to get healthy! I’ve found a great new way to still indulge in the flavors and tastes of nachos, but have none of the guilt! Check it out!

Start with washing mini bell peppers. These usually come in a bag filled with bright red, yellow and orange bell peppers.
Once you wash the peppers, cut the stems off and then cut them in half longwise and remove the seeds.
Spray a foil-lined pan with cooking spray. I use olive oil that I put in a spray bottle like this one.
Spray oil in a medium skillet over medium heat. Add the onion and garlic and then add the turkey. You can use any meat you choose. I’ve made this with lean ground beef and venison many times.
Season the meat and cook until no longer pink. Add the garlic powder, cumin, and salt and add a little water to simmer for a few minutes. Remove from heat.
Meanwhile, arrange the mini bell peppers in a single layer on the lined baking sheet. Fill each half with the meat mixture. Making sure you distribute the meat evenly over each pepper. Top with shredded cheese and jalapenos.
Bake for 8-10 minutes until the cheese is melted and enjoy!
You can top these however you would like… You could add sour cream, guacamole, salsa, pico… whatever your heart desires!
